Our white wines are made in very limited quantities and that is why they are so good.
We emphasize allowing the wines to become themselves. They are allowed the time to clarify naturally (unfined and unfiltered). That extra time allows the natural autolysis of the yeast cells and helps provide weight and texture to the wine. Depending on the wine we often introduce a little bit of oxygen to the wine to add complexity.
As always, our wines are vegan friendly and made with minimal intervention.
