Product Description: Our Sherry — a skin-fermented blend of Chardonnay and Sauvignon Blanc, fortified with our own distilled spirits, aged through a solera system that blends seven vintages. Bold, complex, made for thoughtful moments.
Tasting Notes: A captivating amber hue with notes of hazelnut, almond, dried apricot, and figs. The palate opens dry, followed by an intriguing balance of sweet and sour. Layers of vanilla, spice, and a hint of salinity. Persistent, warm, satisfyingly complex.
Winemaker's Notes: This Sherry began with a skin-fermented blend of Chardonnay and Sauvignon Blanc. We invested in a still, navigated the complexities of federal licensing, and started distilling our wines for fortification. The solera system: each new vintage is introduced into the top barrel, cascading down and blending with previous vintages. Seven vintages, interwoven. A testament to our terroir and growth.
