Our red wine collection features a variety of fruit-forward styles, all made with minimal intervention and utilizing natural yeast when possible. Any yeast inoculations are made with certified organic/non-GMO yeasts, and some wines may be aged in French oak barrels. We also utilize a variety of maceration techniques and may use the ripasso method to increase the concentration of colour and flavour in some wines.
Our commitment is to cool climate winemaking and viticulture, and we maintain our own vineyards to organic standards while incorporating the principles of permaculture. We use only the finest Ontario fruit grown in Prince Edward County and the Niagara Peninsula and strive to become a zero-waste winery. Our red wines are vegan, and made without any animal-derived fining agents, furthering our commitment to sustainability and compassion.
