Crafting the Blend:

The foundation of our Sherry is a solera system. Each new vintage is introduced into the top barrel, cascading down and blending with previous vintages. This technique has produced a wine that is a harmonious blend of seven vintages.

Tasting Notes:

  • Colour: A captivating amber hue, indicative of its depth and maturity.
  • Aroma: Enticing notes of hazelnut and almond intertwine with dried apricots and figs.
  • Palate: Tapestry of flavours. Opens dry, followed by an intriguing balance of sweet and sour. Layers of vanilla, spice, and a hint of salinity.
  • Finish: Persistent, warm, and satisfyingly complex.

Winemaker's Note:

This Sherry is a distinct project that began with a skin-fermented blend of Chardonnay and Sauvignon Blanc. We invested in a still, navigated the complexities of federal licensing, and started distilling our wines for fortification.

Remarkably versatile - pairs beautifully with cheeses and nuts, charcuterie, olives, mushroom dishes, and chorizo.
