What it is
Three years in barrel, two in bottle, and now they're yours. We're opening the cellar for the first official pours of our Syrah and Petit Verdot — two reds we've been quietly aging while everyone obsessed over our whites and oranges. This is the week they meet the public.
About the Syrah
Single-vineyard, French oak (40% new), 14% alcohol. Black pepper and cured meat on the nose, dark plum and a touch of violet on the palate, savoury graphite finish. Built to age another five years if you've got the patience.
About the Petit Verdot
Late-ripening, deeply structured, traditionally a blender — but Hillier gives Petit Verdot enough sun and enough wind to stand on its own. Inky purple, blackberry and dark chocolate, firm tannins, 13.8% alcohol. The cellar's favourite for steak.
What's happening at the vineyard
- Free 1oz tastings of both wines all week at the bar
- $10 glass with chef's pairing — each wine paired with a small plate built for it
- Cellar tour every day at 2pm — 30 minutes, free with tasting
- Limited release bottles available — we made 600 bottles of each
Why we waited
Big reds take time. We harvested both in 2023, racked them into French oak that fall, and they've been moving slowly toward this week ever since. Petit Verdot needs the time to soften. Syrah needs the time to integrate. We could have rushed them. We didn't.
