A rich bouquet of florals all blends together, with lavender, lilac, and chamomile coming out on the nose. The taste is a light golden apple with sumac coming through between different flowers on each taste.
Winemaker's Note:
The inspiration behind this wine comes from the winemaker's childhood memories of his mother's herb garden. He enlisted local growers and began to forage from his farm, collecting everything fresh and infusing the wine with them. Madonna Vermouth is perfect for an aperitif, served with cheese plates, or in cocktails.
Production Note:
Made from a blend of wines. Every year we retain approximately 1/3 of inventory and blend into the new production, similar to a modified solera method to help build character and consistency.
Food Pairing Suggestions:
Pairs well with light cheeses (chèvre, brie, feta), grilled seafood, salads, fruity desserts, spicy food, light pasta dishes. Also a great aperitif.
Serving Suggestions:
- Best served chilled
- Ideal temperature: 7-11°C
"This is something really special from anywhere in Ontario. There is a freshness and concentration of aromas and flavours that make this incredibly easy to sip on its own."
Andre Proulx - Andrewinereview.ca - April 19, 2018
"The flavours are smartly balanced, with none dominating. And fans of bone-dry martinis may be happy to know this is one very dry vermouth."
Beppi Crosariol - The Globe and Mail - March 28, 2019
Frequently Asked Questions
How should I serve Madonna Vermouth?
Our favourite way: a spritz. Madonna + soda + a twist of orange peel + ice. Refreshing, low-effort, balances the botanicals perfectly. Otherwise: chilled 7-11°C in a small wine glass or coupe, or on the rocks.
What food pairs well with Madonna Vermouth?
Light cheeses (chèvre, brie, feta), grilled seafood with herb butter, fruit-based desserts (raspberry sorbet, cherry clafoutis), salads with citrus dressing. Or just on its own as an aperitif.
What is vermouth? Is Madonna vegan?
Vermouth is a fortified wine infused with herbs, spices, and flowers. Madonna is our dry white vermouth - Ontario's first artisanal vermouth, made since 2017 with 20+ botanicals from our gardens. Vegan. 15.5% ABV. Dominated by lavender, lilac, and chamomile.
How long will Madonna Vermouth keep after opening?
Re-cap and refrigerate. 1-2 months. Fortified wines hold up much longer because of the higher alcohol.
Where can I buy Madonna?
Direct at the winery, online (Ontario only), or at select restaurants through our licensee program. Not currently at the LCBO.
