★ Winemaker's note

The story behind this bottle

We harvested our apples by hand over several weeks and manually ground them for fermentation with natural yeasts on the skins. Unlike grape presses that gently extract juice, apple presses crush the harder fruit — and lacking an apple press, we chose skin fermentation. This naturally softened the apples for pressing into a smooth "sauce" and let us harness the aromatic oils from the apple skins, enhancing the pet-nat with a richer, more authentic apple aroma than traditional methods.
