★ The heritage ★

How this style began.

Piquette is an age-old winemaking method originating in ancient Rome, where farmers and vineyard workers utilized leftover grape pomace. The pomace is re-fermented with water and sugar, resulting in a lightly effervescent wine with lower alcohol content and a distinctive taste. Because Piquette is made from pressed-grape pomace rather than juice, it is not eligible for VQA designation. Our Baco Baco is crafted using this traditional technique, with a focus on the Baco Noir grape variety and the innovative use of our saline well water.

Cold, 7–11°C. A tulip-shaped wine glass or flute helps preserve the bubbles. Open carefully — bottle-fermented Piquettes can be lively on opening.

What food pairs well with Baco Baco?

Grilled shrimp tacos, caprese salad, quinoa salads, watermelon-feta-mint, prosciutto-wrapped melon — patio food and bright summer flavours.

What is Piquette? Is this vegan?

Piquette is an ancient winemaking method — re-ferment leftover grape pomace with water and sugar. Light, low alcohol, naturally sparkling. Ours uses 100% Baco Noir skins and our saline well water. 7.6% ABV. Vegan. Because Piquette is made from pomace rather than juice it is not eligible for VQA classification.

How long will Baco Baco keep after opening?
