Kalimotxo (kah-lee-MOH-cho) is the Basque Country’s gift to summer: red wine and cola over ice. It sounds wrong and tastes completely right. Our patio version swaps in Haberdasher, our sweet red vermouth, for a little more botanical depth — but the traditional red-wine version works beautifully too.
Ingredients
- 2 oz Haberdasher sweet red vermouth (or red wine for a traditional kalimotxo)
- 4 oz cola
- Ice
- Orange slice, to garnish
How to make it
- Fill a Collins glass with ice.
- Add the sweet red vermouth and the cola — classic kalimotxo is roughly half and half, but we like a touch more cola.
- Stir gently, garnish with an orange slice, and serve.
Tips
Cold everything — cold vermouth, cold cola, lots of ice. The orange slice isn’t just decoration; the citrus oil lifts the whole drink. Want the traditional version? Use a young, fruity red like our Gamay Noir in place of the vermouth.
The Vermouth Kalimotxo is on our summer menu at $11. New to vermouth? Start with What is Vermouth?
