This wine has a dense purple colour, with a light and effervescent body. The palate is greeted with zesty acidity and a subtle sweetness that is balanced by a subtle finish with a hint of thyme.
We had been discussing for a while that we wanted to make an affordable Lambrusco-style wine, but we had not put much thought into it. However, harvest began early on some Gamay we had come in for a cull pick we didn't think would fully ripen for table wine. It was low in sugar and high in acid. It would make a great sparkling wine base. As fermentation progressed with the Gamay Noir, we received a shipment of Baco Noir that we were planning on using as a base for our Haberdasher Vermouth. The Gamay was a little too tart and light in colour, and the Baco was the opposite. So we decided to blend them. The wines fermented out on their skins and were pressed and settled in a tank before bottling. We bottled the wine with a small sugar addition to encourage bottle fermentation and guarantee a sparkling result.
