Fermented and aged at our winery in Prince Edward County, this wine has a flavour profile that's bursting with notes of dried sandalwood, cranberry, Christmas mulling spices, and raspberries. The wine is smooth and full-bodied on the palate, with a bright acidity that's perfectly balanced. The finish is refreshing and fruity, a true delight on the tongue. It's a dry wine that's excellent for sipping or pairing with grilled meats, roasted vegetables, or charcuterie. Best served chilled, at around 12-13°C.

Production Notes:
"We immediately pressed a quarter of these grapes and took the juice to make rosé. The leftover skins were still wonderfully juicy, so some were used in another wine while some were put back into the rest of the Gamay to increase concentration and colour. Aged in used French oak barrels for 2 months and bottled unfined, unfiltered."
