Piquette has a long and storied history dating back to ancient civilizations, where it was made by reusing leftover grape must and adding water to it. The mixture was then allowed to ferment a second time, resulting in a lower alcohol content and a lighter, fresher flavour. This early production of piquette was likely a way for winemakers to make use of excess grape must and create a new, lower-alcohol beverage.
