  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sweet potatoes, bell pepper, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 10-12 minutes or until the sweet potatoes are tender.
  3. Add the black beans to the skillet and stir to combine.
  4. In a 9x13 inch baking dish, spread a layer of enchilada sauce on the bottom.
