The grapes are harvested in late September and early October, allowing them to retain acidity and freshness. The soil in the vineyard is mostly clay-loam, with good drainage, which helps the grape to grow healthy and strong.

Pinot Gris is a moderate vigour vine, requiring proper pruning to manage yields. The grape is susceptible to common cold-climate diseases such as powdery mildew and black rot. We macerate the fruit on the skins for 12 hours and age it in a barrel for three months to add some texture and weight to the wine. The only wine we use Pinot Gris for is our Pinot Gris.
