Winemaker's Note:
We harvested our apples by hand, a process stretched over several weeks and manually ground them for fermentation with natural yeasts on the skins. Unlike grape presses that gently extract juice to avoid bitterness, apple presses crush the harder fruit.
Lacking an apple press, we chose skin fermentation, a method that naturally softened the apples for pressing into a smooth "sauce." This approach also allowed us to harness the aromatic oils from the apple skins, enhancing the pet-nat with a richer, more authentic apple aroma, distinguishing it from traditional methods.
