The story behind this bottle

This year's White Apple Piquette showcases the perfect marriage of locally sourced apples — McIntosh, Spy, Gala, Golden Delicious, Zestar, Ida Red, Honeycrisp, Ambrosia — and the pressed grape skins of Chardonnay, Riesling, and Vidal. Fermentation on grape pomace enhances the cider's body and adds complexity. The result is a sparkling wine that's crisp, lightly tannic, and full of character.

How this style began.

Piquette is an ancient winemaking method from France that traditionally reuses grape pomace to create lightly effervescent, low-alcohol wines. We've taken this sustainable concept and given it a fresh twist by combining grape pomace with local apple cider. The result honours tradition while embracing local Ontario flavours.
