Crafting the Blend: 

The foundation of our 5th Element is a solera system. Each new vintage is introduced into the top barrel, cascading down and blending with previous vintages. This technique has produced a wine that is a harmonious blend of seven vintages, each contributing to its unique character.

Tasting Note:

  • Colour: A captivating amber hue, indicative of its depth and maturity.
  • Aroma: Enticing notes of hazelnut and almond intertwine with dried apricots and figs, creating a rich bouquet.
  • Palate: This wine is a tapestry of flavours. It opens dry, followed by an intriguing balance of sweet and sour. Layers of vanilla, spice, and a hint of salinity add to its complexity.
  • Finish: Persistent, warm, and satisfyingly complex. A delightful journey in every sip.

Winemaker's Note:

The Revival of the 5th Element: We're thrilled to reintroduce our 5th Element, a distinct project that began with a skin-fermented blend of Chardonnay and Sauvignon Blanc. Our aim was to craft a non-vintage wine that embodies the essence of our terroir. However, despite our efforts, we encountered a challenge: Volatile Acidity (VA), primarily acetic acid, was rising. Our philosophy of minimal intervention in winemaking made us reluctant to rely heavily on sulphur.

Inspiration and Innovation: In our quest for solutions, we turned to the old world and found inspiration in Amontillado Sherry, a personal favourite. The answer was fortification. We invested in a still, navigated the complexities of federal licensing, and started distilling our wines for fortification.

The 5th Element is remarkably versatile. It pairs beautifully with a range of foods, from an array of cheeses and nuts to charcuterie, olives, mushroom dishes, and chorizo. Its boundless compatibility makes it a perfect accompaniment for diverse culinary explorations.
