We decided to blend some of our Gamay Noir fruit with our Vidal Blanc juice as the Gamay was a little tart in comparison. The addition of the Vidal helped add fruity aromatics, softened the body, and reduced the tannin.We changed how we bottled this year. We clarified the wine a little more than last year and bottled it with lower residual sugar. The result is that the carbonation is much more manageable. The new pet-nats do not gush like previous vintages, but you should still chill the wine.
