We pressed a quarter of these grapes immediately and took the juice to make rosé. The leftover skins were still wonderfully juicy so some were used in another wine while some were put back into the rest of the Gamay to increase concentration and colour. Aged in used French oak barrels for 2 months and bottled unfined, unfiltered.
