Introduce yourself to the unique taste of our Cabernet Franc wine, crafted from 100% Cabernet Franc grapes. This wine is macerated and fermented on its skins for 30 days, aged in French oak barrels for nine months, blended in a stainless steel tank shortly before bottling. Unfined and unfiltered, it's a perfect choice for those who love full-bodied red wines.

 

Tasting Notes:

This Cabernet Franc has a rich aroma of Black Cherry, Fig, Clove, and Chocolate, with a hint of Anise and Peppercorn. On the palate, it is soft, rich, and slightly warm with a bouquet garni and black cherry finish. The wine is well balanced with a moderate acidity and a subtle sweetness that makes it perfect for sipping on a warm summer day or any occasion.

Winemaker's Note:

Cabernet Franc is a variety we have made off and on. It's long been one of my favourite Ontario red varieties, but I couldn't afford to make it. The fruit is expensive, I think it performs best after sitting in a barrel for a while, and barrels are pricey. It was always one of those wines that I wanted to make, but it wouldn't make the budget cut. But I love making it. Even more, I love drinking it.

We macerated and fermented this wine on its skins for 30 days. The wine settled quickly after being pressed. We then racked the wine into French oak barrels, where it aged for nine months. We blended in a stainless steel tank shortly before bottling. Unfined and unfiltered.

While it is delicious now, this wine will age very well.
