Generally speaking, we only have so much space, and I have taken the position that we don't really have room for a second aromatic white wine since we struggle to keep ahead of our Sauvignon Blanc production. However, the team convinced me to make a small trial lot of Riesling in 2019. We were not planning on making any, but the 2019 Riesling that we had just released was flying off the shelves. I guess we were making Riesling again. Fortunately, one of our growers had a little extra available for us.Typically Riesling is one of the last varieties harvested in Ontario, and 2020 was no different. Our challenge with late-season whites is that we generally ferment outside, and when the temperature gets cold enough, it can stall our fermentation, making our lives a bit unpredictable. This wine stuck on us, and we didn't get it to ferment again until March. Fortunately, its aromatic profile retained its freshness, and I love lees-influenced Riesling. We allowed the wine to settle naturally and bottled unfined and unfiltered.
