We had been discussing for a while that we wanted to make an affordable Lambrusco-style wine, but we had not put much thought into it. However, harvest began early on some Gamay we had come in for a cull pick we didn't think would fully ripen for table wine. It was low in sugar and high in acid. It would make a great sparkling wine base. As fermentation progressed with the Gamay Noir, we received a shipment of Baco Noir that we were planning on using as a base for our Haberdasher Vermouth. The Gamay was a little too tart and light in colour, and the Baco was the opposite. So we decided to blend them. The wines fermented out on their skins and were pressed and settled in a tank before bottling. We bottled the wine with a small sugar addition to encourage bottle fermentation and guarantee a sparkling result.
Food Pairing Suggestions:
- Grilled meats such as pork chops or sausages
- Rich pasta dishes with meat or mushroom-based sauces
- Soft cheese such as brie or camembert
- Charcuterie such as salami or prosciutto
- Spicy dishes such as Thai or Mexican cuisine
- Aperitifs and light appetizers such as olives or marinated vegetables
The low alcohol content and zesty acidity of this Pet-Nat wine make it a perfect pairing for bold and hearty dishes. The subtle sweetness and hint of thyme in the finish also complement the flavours of grilled meats, rich pasta dishes, and soft cheese. The wine's effervescent body helps to cut through rich and oily flavours, making it an ideal match for charcuterie and spicy dishes. Additionally, its light and refreshing character make it a great aperitif or pairing for light appetizers.
